Our expansive marble bar puts the whole process on show — every cocktail shaken, stirred or built right in front of you. It's a bar designed for conversation, with bar stools set close so you can watch, ask questions and get to know the team pouring your drink.
The bar itself was custom-built by Tasmanian craftsmen — brass, stone, carpentry and lighting all sourced locally, wrapped around a striking patterned tile front.
We take pride in sourcing the best local ingredients we can find. Syrups and infusions are made in-house, and we've invested in the glassware, ice and equipment it takes to do a drink justice.
Expect prohibition-era classics, aperitifs, sours, modern originals and thoughtful mocktails — alongside a growing shelf of Tasmanian whisky, gin and amari, and premium wine preserved and poured by the glass. Our bar team is already experimenting with Indian-spiced twists on the classics to fit the new Sip 'N' Dine drinks list.
Tucked beside the 30-metre Penny Royal waterfall, our glass-walled lounge lets you take in the cascade in comfort — by daylight or lit up after dark. It's the spot for a pre-dinner drink, a relaxed catch-up, or simply watching the water fall.
